Veganuary Vegan Pizza recipe
- 1 onion cut into thin slices
- Vegan cheese (your favourite type)
- Cold pressed rapeseed oil or extra virgin olive oil
- Rocket leaves
- Balsamic glaze (the syrupy type)
- Thawed out ready made raw, frozen pizza dough balls (Northern Dough Company Pizza Dough Balls are very good and available at most supermarkets)
- 200ml of passata
- 1 tbsp cold pressed rapeseed oil or extra virgin olive oil
- 2 tbsp dried oregano
- 2 tsp of garlic puree
- 1 tsp sugar
- Salt & pepper
Method: Pizza Sauce
So simple: Put all the ingredients into a jar with a lid and shake vigorously until all the ingredients are combined.
Method: Vegan Pizza
Fry the onion gently in a little oil until they are soft and caramelised, set aside.
Place a pizza stone or pizza baking tray on the middle shelf of the oven to preheat.
Set the oven to the pizza setting or true fan with bottom heat at the maximum temperature, and preheat for at least 20 minutes.
On a floured surface roll the dough into a round shape just smaller than your pizza peel.
Sprinkle flour over your pizza peel and then carefully lift and place the place the dough on the pizza peel.
Place 1 - 2 heaped dessert spoon of pizza sauce onto the centre of the pizza and using the back of the spoon spread it outwards in a spiral motion until it is 2cm away from the outer edge of the dough.
Put some of the caramelised onions onto the pizza.
Now add some of the vegan cheese in between the onions.
Place the pizza on the hot pizza stone and bake for 5 - 10 minutes or until the base has risen well and the cheese has melted.
Remove the pizza and sprinkle with some rocket leaves dressed in a little oil.
Finally, squeeze some balsamic glaze over the pizza to give it a little extra zing!
